The Peruvian Amazon is in vogue on this tour that introduces you to the renowned Peruvian chef Pedro Miguel Schaffino who will cook for you a delicious dish from the Peruvian jungle.
The renowned chef and owner of the restaurant “Malabar” Pedro Miguel Schaffino is a graduate of the Culinary Institute of America and the Italian Culinary Institute for Foreigners, there in Italy he sought to perfect himself in the culinary techniques he learned and when he returned to Peru he decided to immerse into the country to learn more about the Peruvian products from each regions to finally replicate them in the delicious dishes on the restaurant’s menu.
Malabar Restaurant is one of the most recognized in Peru as well as its creator who recently received the American Express Icon Award 2019 for his contribution to restoring the techniques and products of ancient Peruvian cuisine.
This culinary experience begins with a visit to a local market so that you know some of the ingredients that are used in the preparation of the restaurant's dishes, you can smell and touch some of those ingredients such as aguaymanto (Peruvian groundcherry), chirimoya (custard apple) and lucuma, exotic Peruvian fruits that you will want to try and keep trying.
Once in the kitchen workshop, you will learn how to prepare the delicious Pisco Sour combining the pisco with egg white in a shaker to finally serve it in a glass, giving it the final touch with a little bit of angostura bitters. Then comes the main dish, the Peruvian ceviche prepared with small pieces of fish marinated in citrus juices to which spicy red chili is added and served with “choclo graneado” (corn kernels), red onion and sliced parboiled sweet potato.
And comes the best part to end this tour, the 5-course tasting menu created by Chef Schiaffino and which includes hot drinks. This tour is an interesting and educational way to understand the importance of preserving native products so that they do not disappear and continue to form part of the national culinary day by day.
