Overview

In this activity you will witness and participate in the “Pachamanca” ritual, well known in the Andean world as the ancestral cooking process of Andes foods such as potatoes, meat and beans.

For this ceremony we will go to the community of La Calera, in the city of Cotacachi, province of Imbabura. This “Pachamanca” ceremony consists of cooking selected foods for about 2 hours with the steam produced by the heat of incandescent stones in a hole dug in the ground.

The literal meaning of “Pachamanca” is “Pot of the Universe” and this word comes from the ansestral Quechua language (Pacha = universe, and Manka = pot) and the person in charge of officiating the ceremony is the Yachak of the community, a person to whom attributes special powers and that handles ancestral mystical knowledge and techniques.
